With this circuit, the LED will turn on when the water level drops under the electrode. When the water level is high, FET will conduct or not at all conducted because the gate is connected to ground, therefore no voltage difference between the gate and the source. When the water level goes down, the connection between the gate and the source is off. The gate will have positive voltage, so the FET will conduct and the LED will turn on. If you want the LED to turn on when the electrode briefly connected with the water, connect the grounded electrode with positive pole and put R2 between the gate and the source.
